Quinoa Fritters


Fritters
  • 2/3 cups quinoa, rinsed
  • 1/4 cup white whole wheat flour (or gluten free baking mix)
  • 1/4 cup feta cheese (or vegan cheese)
  • 1/4 cup frozen spinach, thawed
  • 1/4 cup chopped onion
  • 3/4 tsp sea salt
  • 1/4 tsp ground black pepper
  • 1/2 cup parsley, chopped
  • 2 eggs (Or 2 T ground flax seeds mixed with 6 T warm water)
  • 1/4 cup canola oil (or Organic Coconut oil see note below!)
Red Pepper Sauce
  • 1/2 cup non Fat Greek Yogurt (or Veganaise)
  • 1/2 cup roasted red peppers
  • 1 T white wine vinegar
  • 4 cloves minced garlic
  • salt and pepper to taste
