Rosemary and Roasted Garlic Meatloaf




Ingredients:
  • 1 head garlic
  • 2 teaspoons olive oil
  • 1 pound ground beef (80/20)
  • ½ pound ground mild Italian sausage
  • 2 eggs beaten
  • ¾ teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 tablespoon chopped fresh rosemary
  • 2 teaspoons Worcestershire
  • 2/3 cup dry breadcrumbs

Instructions:
  1. Preheat oven to 400 degrees.
  2. Cut one inch off the top of the garlic. Place garlic in aluminum foil, drizzle with olive oil. Wrap in foil and cook for 45min – 1 hour or until the garlic cloves are soft and golden brown. Once cool, remove cloves with a fork and set aside.
  3. Turn oven down to 350 degrees.
  4. In a large bowl combine ground beef, sausage, eggs, salt, pepper, rosemary, Worcestershire, breadcrumbs and roasted garlic. Mix well. Form into a loaf. Place in a loaf pan. Bake for 45 – 60 minutes or until meatloaf is browned and cooked through. Slice and serve.
