Chocolate Coconut Quinoa Cookies

Ingredients
  • 1 ½ cup of almond flour (or almond meal)
  • 1 teaspoon of salt
  • 1 teaspoon of baking powder
  • ½ cup of unsalted butter, room temperature
  • ¾ cup of honey
  • 2 large eggs
  • 1 ½ teaspoon of pure vanilla extract
  • 1 cup cooked quinoa 
  • ½ - ¾ cup unsweetened desiccated coconut (or more if necessary)
  • 1 cup dark chocolate chunks or chips
