Detox Quinoa & Veggie Salad

Ingredients
  • 1 cup quinoa, thoroughly rinsed
  • 2 cups water
  • 2 tsp. Knorr tomato bouillon
  • 1 and 1/2 cups sweet potatoes (3 small ones)
  • 1 can corn, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 cup mini sweet bell peppers, de-seeded and chopped
  • 1 cup cherry tomatoes, halved
  • 3 tbsp. cilantro, finely chopped
  • Salt & Pepper, to taste
  • 1 medium lime or 3 tbsp. lime juice
  • Optional: balsamic vinegar to drizzle on the salad
