Creamy Pesto Dressing

  • 1/4 cup mayonnaise
  • 1/4 cup grated Romano cheese
  • 1 tablespoon white wine vinegar
  • 3 tablespoons prepared pesto
  • 2-4 tablespoons heavy cream
  • 1/4 teaspoon granulated garlic
  • kosher salt and fresh cracked pepper to taste
  1. Combine mayonnaise, Romano cheese, vinegar, pesto, 2 tablespoons heavy cream and granulated garlic in a bowl. Add more heavy cream until desired consistency. Season to taste with salt and pepper.
If you happen to have left overs, this will last a couple of days in the refrigerator. I found that it does get pretty thick when you refrigerate it so I take it out of the fridge about 10 minutes before I want to use it.
