Fritters

- 2/3 cups quinoa, rinsed
- 1/4 cup white whole wheat flour (or gluten free baking mix)
- 1/4 cup feta cheese (or vegan cheese)
- 1/4 cup frozen spinach, thawed
- 1/4 cup chopped onion
- 3/4 tsp sea salt
- 1/4 tsp ground black pepper
- 1/2 cup parsley, chopped
- 2 eggs (Or 2 T ground flax seeds mixed with 6 T warm water)
- 1/4 cup canola oil (or Organic Coconut oil see note below!)
- 1/2 cup non Fat Greek Yogurt (or Veganaise)
- 1/2 cup roasted red peppers
- 1 T white wine vinegar
- 4 cloves minced garlic
- salt and pepper to taste
