- 1 ½ cup of almond flour (or almond meal)
- 1 teaspoon of salt
- 1 teaspoon of baking powder
- ½ cup of unsalted butter, room temperature
- ¾ cup of honey
- 2 large eggs
- 1 ½ teaspoon of pure vanilla extract
- 1 cup cooked quinoa
- ½ - ¾ cup unsweetened desiccated coconut (or more if necessary)
- 1 cup dark chocolate chunks or chips
