Ingredients
- 1 cup quinoa, thoroughly rinsed
- 2 cups water
- 2 tsp. Knorr tomato bouillon
- 1 and 1/2 cups sweet potatoes (3 small ones)
- 1 can corn, drained and rinsed
- 1 can black beans, drained and rinsed
- 1 cup mini sweet bell peppers, de-seeded and chopped
- 1 cup cherry tomatoes, halved
- 3 tbsp. cilantro, finely chopped
- Salt & Pepper, to taste
- 1 medium lime or 3 tbsp. lime juice
- Optional: balsamic vinegar to drizzle on the salad
