Egg-Stuffed Baked Potatoes

Ingredients
baked potatoes, slightly cooled
melted butter
kosher salt and black pepper
shredded cheese (cheddar, gruyere, fontina, pepperjack, or other of your choice)
eggs
additional fillings of your choice: sauteed vegetables, bacon or ham, etc.
Instructions
Preheat oven to 350 degrees.
Slice a layer off the top of each potato.  Use a spoon to gently scoop out insides, leaving a thin layer of potato against the skin and avoiding puncturing the bottom.  Reserve scooped potato for another use.
Brush inside of each potato with melted butter and sprinkle with a little salt and pepper.  Sprinkle a layer of shredded cheese into each potato and add fillings as desired (vegetables, diced meat, etc.)  Fill each potato about 3/4 full.  Crack one egg into each potato.  Sprinkle with a little more salt and pepper.  Top with additional cheese and toppings if desired.
Place potatoes on a baking sheet and cook for about 20 minutes.  Egg whites should be set and yolks soft.

Crispy Oven Fries

Ingredients:
  • 2 pounds of russet potatoes (about 5 potatoes); can be peeled or unpeeled the decision is yours; sliced into 1/2 inch strips
  • 4 cups of water for boiling
  • 1 teaspoon salt
  • 2 tablespoons of olive oil
  • 1 tablespoon of seasoning salt (I like Johnny's)
  • Non-stick cooking spray

Instructions:
  1. Preheat oven to 400 degrees Fahrenheit.
  2. In a pot big enough to hold the water and the sliced potatoes, add water and potatoes; bring the potatoes to a boil; once the water starts boiling add the salt; cook until the potatoes are 3/4 of the way done, about 4 minutes. You should be able to insert the tips of a fork, but it should be a little tough to remove it. (Note: If you are unsure, it is better to under cook the fries at this point, otherwise they may get too soft)
  3. Remove from heat and strain, place under running cold water for a few seconds to stop the cooking process. Strain. Place on a paper towel and pat dry.
  4. In a bowl big enough to fit the fries, add the fries, olive oil and seasoning salt. Gently stir to combine.
  5. Spray a cookie sheet with nonstick spray and lay the fries out in a single layer. Place in the oven; cook for 15 minutes.
  6. After 15 minutes, remove from the oven and turn the fries. Return to oven for 10 more minutes.
  7. After 10 minutes broil for 5 minutes. You can broil for longer depending on how crispy you like your fries.

Parmesan Garlic Roasted Potatoes

Ingredients:
  • Potatoes Cut in to smaller size pieces (I use Russet Potatoes)
  • A few tablespoons of olive oil
  • 2-3 cloves garlic, minced
  • 1 to 2 Tablespoons fresh chopped parsley
  • Fresh grated Parmesan cheese
  • Salt and pepper, to taste

Instructions:

Preheat oven to 450 °F.

Cut potatoes into cubes or wedges.  Bring a pot of water to a boil.
Add the potatoes and cook for 3 to 6 minutes depending on size.

While potatoes are cooking put oil in cast iron skillet or other heavy
pan and heat in oven.

Drain the potatoes  and place them back in the pot.  Put the pot back
on the burner and shake to dry the potatoes and to rough up their
surface. This is what gives roasted potatoes that perfect crust.

Add the potatoes to the hot oil , toss to coat and roast turning once or twice.

When potatoes are almost tender sprinkle with fresh
garlic and Parmesan, salt and pepper and continue roasting until
potatoes are tender.  Turn at least one more time for even browning.

Just before serving, toss with fresh chopped parsley.
