Baked Garlic Cod




Ingredients:
  • 2 cod fillets
  • 1 cup panko bread crumbs
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon kosher salt
  • 1 teaspoon olive oil
  • 1/2 cup Skordalia (Greek Garlic Sauce)

Instructions:
  1. Preheat oven to 400 degrees. Spray a baking sheet with non-stick spray
  2. Dip cod fillets in skordalia.
  3. In a bowl combine bread crumbs, parsley, oregano and salt.
  4. Press fish filets into mixture and coat completely. Place on prepared baking sheet. Bake for 20 minutes or until fish flakes easily. Serve.
