Ingredients
- 2/3 cups almond meal
- 1 cup cooked quinoa
- 1/3 cup tapioca starch
- ½ teaspoon xanthan gum
- 1 teaspoon baking powder
- ½ teaspoon sea salt
- 1 cup coconut palm sugar
- 4 tablespoons unsalted butter or coconut oil, softened
- 2 eggs (see note)
- ¼ cup applesauce
- 1 teaspoon vanilla extract
- ½ teaspoon almond extract
- ½ cup chocolate chips
Instructions
- Preheat oven to 350 degrees. Line an 8 x 8 pan with parchment paper and coat with cooking spray.
- In a food processor, combine almond meal, quinoa, tapioa starch, xanthan gum, baking powder and sea salt. Blend for 2 minutes, until smooth.
- Add sugar, butter, eggs, applesauce, vanilla and almond extract and pulse until combined. Stir in chocolate chips.
- Transfer mixture to prepared pan and bake for 30 to 35 minutes. Allow to cool and cut into squares.
